Despite the below average weather temperatures, spring is in full swing! We have all had a long winter filled with chili's, stews, holiday desserts, and maybe a beer or two.... or fifty. To help you get in the spring and summer mood, try one of the recipes below to help melt away those winter blues! They are filled with healthy fruits and vegetables, and are on the lighter side to help you feel brighter! Plus, who said that a cultural dish has to be heavy and fattening!?
1.) Pimm's No. 1 Cup - Just because it's spring doesn't mean you have to put down the beer, but opt for this refreshing cocktail that you can enjoy on a warm day (or to make you think it is warm on a cold day)!
2.) Beet and Arugula Salad - Throw this together in five minutes, add a protein if you wish, and dinner is a go!
3.) Caprese Salad - A classic salad for lunch or an appetizer
4.) Broken Down Stuffed Pepper - A weekly dinner in our household! This one pot meal can be made in a crock pot too!
5.) Cauliflower and Leek Soup - Okay, it's a soup, but it is a light and refreshing soup that helps you get your dose of veggies!
6.) Grilled Salmon with Greek Yogurt Sauce and Salad - Salmon is so amazingly good for you, so try to incorporate this into your weekly dinner rotation, and you will feel great! Grilling the salmon gives it a great sear too that tastes delicious.
7.) Healthy Quinoa Burrito Bowl - Another dish that can be thrown together in minutes, especially if you have some pre-cooked quinoa on hand. This can be enjoyed for dinner or lunch.
8.) Mini Eggplant Pizzas - Get the kids involved for this one! It is just like assembling a pizza, only you get to have your veggies by using the eggplant as a base.
9.) Pasta Goo-Gootz - Another warm-weather favorite in our house! You may not think of pasta as being "light," but opt for vegetables and fresh tomatoes over heavy red and meat sauces. This is also our go-to meal before a road race!

BONUS: Rhubarb Crumble - Because you can't not have dessert! With Rhubarb starting to make an appearance again in markets, rather than going for an ultra rich chocolate dessert or cake, try this fruity crumble that will satisfy your sweet tooth!
